Chopped Salad


green bell pepper
grape tomatoes
red onion
fresh flat-leaf parsley
kalamata olives
olive oil
balsamic vinegar
black pepper

Get out a pretty bowl that will hold the amount you want to make.  I wanted to make this salad for 2 people so I chose a large soup bowl.  Start chopping.  Add as a much or little of each ingredient as you like.  And measure in some olive oil and balsamic vinegar to taste.  Enjoy!


I made this salad with some homemade croutons I made from left over sourdough.  I simply cut the bread in cubes and placed them on a cast iron skillet and turned on the heat, then I added a drizzle of olive oil.  A great way to use up leftover sourdough and add some substance to the salad.

Add in quinoa to make this salad a complete meal.
